Mary's Blueberry Oat Bran Muffins

 

1 1/4 cup flour (or 1/2 cup whole wheat)
1 cup quick-cooking oats
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 egg whites
1/2 cup water
1/3 cup vegetable oil (I use applesauce)
1 cup fresh or frozen blueberries

TOPPING (optional)
2 tablespoons sugar
1/4 teaspoon cinnamon

In a bowl, combine flour, oats, sugar, baking powder, baking soda and salt.

In another bowl, beat egg whites, water and oil (or applesauce). Stir into dry ingredients just until moistened. Fold in blueberries.

Fill muffin tin cups 3/4 cup full. If using topping, combine sugar and cinnamon. Sprinkle over muffins.

Bake at 400 for 18 to 22 minutes. Cool for 5 minutes.

Makes one dozen.

If using frozen blueberries, do not thaw before adding to batter.
