Rosy Poached Pears
4 ripe pears
2 cups cranberry-apple juice
½ tsp. vanilla extract
Peel the pears, then cut them in half lengthwise and remove the cores. Place in a saucepan with the juice, and bring to a slow simmer. Cook, uncovered, until the pears are tender when pierced with a fork, about 10 minutes. Transfer the pears to 2 small plates or other flat dishes.
To make a sauce, increase the heat and boil the juice, uncovered, until it is reduced to a ½ cup. Stir in the vanilla, then pour the sauce over the pears. Serve warm or chilled.
Makes 4 servings. Serving size: 10 oz.
