Super Easy Pudding

 

16 oz. silken tofu
1 cup pineapple-orange juice
1 ripe banana
½ cup pineapple chunks 

Puree all except pineapple chunks in a food processor or with a hand blender. Stir in the pineapple chunks. Put in serving dishes and chill. Yummy!

For a frozen version:
substitute the silken tofu with nonfat frozen vanilla yogurt. Freeze for 6 hours or overnight.

Makes 5 servings. Serving size: ¾ cup
