Baked Fish with Rainbow Salsa

 

Fish:

  • Four four-ounce fillets of fish fresh or thawed
  • 1 teaspoon paprika
  • 4 tablespoon water

Salsa:

  • ½ cup diced pineapple fresh or canned
  • ½ cup diced mangoes or peaches
  • ¼ cup diced green onion
  • ½ cup diced bell peppers
  • 1 cup diced ripe tomatoes
  • juice of 1 lime
  • optional - diced jalapeno
  1. Preheat your oven to 350 degrees.
  2. Place the fish fillets on a baking pan so they are spread evenly apart.
  3. Sprinkle the tops of the fish with the paprika then place the water on the tray.
  4. Bake until the fish is done- when it flakes apart and is fork tender, about 15-20 minutes.
  5. Meanwhile, place the ingredients for the salsa in a medium-sized bowl and mix well.
  6. Serve each fillet with ½ cup of salsa on top.

Optional serving suggestion: we recommend serving this fish with fresh steamed vegetables, boiled new potatoes and fresh parsley on top.

Makes 4 servings. 1 cup each serving.
