Baked Salmon Fillets with Cucumber Raita

 

2-4 ounce pieces of salmon
½ cucumber semi-peeled and diced
½ cup nonfat sour cream or plain yogurt
½ tsp. dried dill 

Preheat oven to 350°. Remove any visible bones from the salmon fillets and place skin down on a baking pan. Lightly moisten the pan with a little water and place the salmon in the center of the oven. Bake until the salmon is done-test with a fork and make sure the center is no longer translucent, about 15-20 minutes.
Meanwhile, prepare the raita by combing the cucumber, sour cream, and dill. Serve salmon topped with riata. Servings suggestions include: boiled red potatoes and your favorite selection of steamed veggies.

Makes 2 servings. Serving size: 9 oz.
