Corny Beany Pizza
- One 15 ounce can black beans with liquid
- ¼ tsp. garlic powder
- 1 cup cornmeal
- 1 teaspoon baking powder
- 2 cups fat free buttermilk
- 2 egg whites
- 1 green pepper chopped
- 1 onion chopped
- ½ cup reduced fat shredded cheddar cheese
- Preheat oven 450°
- Heat beans in a saucepan with the garlic powder until quite hot. Pour into an 8 inch by 8 inch square pan spayed with cooking oil spray.
- In a large bowl, mix the cornmeal, baking powder and salt.
- In another small bowl, mix the buttermilk and egg white together.
- Pour wet ingredients into the dry and mix smooth. Pour cornmeal mix over the beans.
- Bake for 15 minutes. Remove from the oven and carefully sprinkle the onion and pepper over the top.
- Return to the oven until cornbread is done, about 20 minutes.
- Finally, sprinkle cheese over and bake until cheese melts, about one minute.
Makes 4 servings. Serving size: 13 oz.
