Corny Beany Pizza

 
  • One 15 ounce can black beans with liquid
  • ¼ tsp. garlic powder
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 2 cups fat free buttermilk
  • 2 egg whites
  • 1 green pepper chopped
  • 1 onion chopped
  • ½ cup reduced fat shredded cheddar cheese
  1. Preheat oven 450°
  2. Heat beans in a saucepan with the garlic powder until quite hot. Pour into an 8 inch by 8 inch square pan spayed with cooking oil spray.
  3. In a large bowl, mix the cornmeal, baking powder and salt.
  4. In another small bowl, mix the buttermilk and egg white together.
  5. Pour wet ingredients into the dry and mix smooth. Pour cornmeal mix over the beans.
  6. Bake for 15 minutes. Remove from the oven and carefully sprinkle the onion and pepper over the top.
  7. Return to the oven until cornbread is done, about 20 minutes.
  8. Finally, sprinkle cheese over and bake until cheese melts, about one minute.

Makes 4 servings. Serving size: 13 oz.
