Black and White Bean Salad

 
  • 1 cup cooked soy beans
  • 1 can black beans (15 ounces) rinsed and drained
  • ¼ cup green onions sliced
  • 1 tomato diced
  • ½ green pepper diced
  • 1 Tbsp red wine vinegar
  • 1 tsp olive oil
  • black pepper to taste
  1. Combine all ingredients together in medium-size mixing bowl.
  2. Chill until ready to serve.

Optional serving suggestion: serve over 1 cup of fresh ready-to-serve spinach leaves.

Makes 4 servings. Serving size: ½ cup
