Blackberry-Rhubarb Compote
- 1 orange zest only
- ½ cup sugar
- 2 Tbsp cornstarch
- 2 cups fresh or frozen blackberries
- 2 cups chopped rhubarb
- Combine all ingredients in a medium-sized bowl.
- Place in microwave container and cook on high until mixture is thick and bubbly, about 10-13 minutes.
- Serve warm or chilled.
Makes 4 servings. Serving size: ¾ cup
