Blackberry-Rhubarb Compote

 
  • 1 orange zest only
  • ½ cup sugar
  • 2 Tbsp cornstarch
  • 2 cups fresh or frozen blackberries
  • 2 cups chopped rhubarb
  1. Combine all ingredients in a medium-sized bowl.
  2. Place in microwave container and cook on high until mixture is thick and bubbly, about 10-13 minutes.
  3. Serve warm or chilled.

Makes 4 servings. Serving size: ¾ cup
