Chilled Zucchini Salad
- 4 small zucchini sliced
- 1 cup packed fresh spinach
- 2 Tbsp chopped parsley
- 2 green onions sliced
- 6 Tbsp Balsamic vinegar
- ½ tsp oregano
- ½ tsp basil
- dash of black pepper
- Place zucchini and other vegetables into a bowl.
- Add all other ingredients.
- Mix gently but thoroughly and refrigerate until chilled.
Makes 4 servings. Serving size: ¾ cup
