Chilled Zucchini Salad

 
  • 4 small zucchini sliced
  • 1 cup packed fresh spinach
  • 2 Tbsp chopped parsley
  • 2 green onions sliced
  • 6 Tbsp Balsamic vinegar
  • ½ tsp oregano
  • ½ tsp basil
  • dash of black pepper
  1. Place zucchini and other vegetables into a bowl.
  2. Add all other ingredients.
  3. Mix gently but thoroughly and refrigerate until chilled.

Makes 4 servings. Serving size: ¾ cup
