Chopped Salad

 
  • 1 Tbsp olive oil
  • 4 Tbsp red wine vinegar
  • 2 Tbsp grated parmesan cheese
  • ½ tsp dried oregano
  • fresh cracked black pepper
  • 1 bell pepper chopped
  • 1 cup cooked garbanzos drained and rinsed
  • 1 cup each: shredded romaine lettuce and shredded cabbage
  • 1 orange diced
  • 2 green onions sliced
  • ½ cup sliced radishes
  • 1 cup diced ripe tomato
  1. Toss all ingredients together.

Serves 4. Serving size: 1.5 cups
