Dashing Spinach Salad
- 1 cup nonfat berry-flavored yogurt
- ¼ cup mashed berries
- 1 tsp olive oil
- 4 Tbsp flavored vinegar
- black pepper to taste
- 4 cups ready-to-serve spinach packed
- ¼ walnuts chopped
- ½ diced red onions
- 1 cup cooked kidney beans drained and rinsed
- ½ cup cauliflower diced
- Combine yogurt, berries, vinagar and black pepper in a medium size bowl. Mix well.
- Add the rest of the ingredients and toss.
- Serve immediately or refrigerate up to one hour before serving.
Makes 4 servings. Serving size: 2 cups
