Fiesta Corn Salad

 
  • 1 cup canned corn (drained)
  • ¼ cup finely chopped red onion
  • ½ diced red bell pepper
  • ¼ cup chopped cilantro or parsley
  • 1 Tbsp. seasoned rice vinegar
  • 1 Tbsp. cider vinegar
  • ½ Tbsp. lemon juice
  • ½ minced garlic clove
  • ½ tsp. cumin
  • ½ tsp. coriander
  • pinch cayenne pepper
  1. Combine the corn, onion, peppers, tomato and cilantro in a large salad bowl.
  2. In a small salad bowl, combine the vinegars, lemon juice, garlic, cumin, coriander and cayenne.
  3. Pour over the salad and toss gently to mix.

Makes 3 servings. Serving size: 1 cup
