Fiesta Corn Salad
- 1 cup canned corn (drained)
- ¼ cup finely chopped red onion
- ½ diced red bell pepper
- ¼ cup chopped cilantro or parsley
- 1 Tbsp. seasoned rice vinegar
- 1 Tbsp. cider vinegar
- ½ Tbsp. lemon juice
- ½ minced garlic clove
- ½ tsp. cumin
- ½ tsp. coriander
- pinch cayenne pepper
- Combine the corn, onion, peppers, tomato and cilantro in a large salad bowl.
- In a small salad bowl, combine the vinegars, lemon juice, garlic, cumin, coriander and cayenne.
- Pour over the salad and toss gently to mix.
Makes 3 servings. Serving size: 1 cup
