Garden Tomato Salad

 
  • 3 medium tomatoes
  • 1 large green pepper
  • ½ cup green onion
  • 1 cup fresh parsley
  • 1 cucumber
  • 4 red radishes
  • 1 Tbsp chopped mint
  • 1 clove garlic minced
  • ½ Tbsp olive oil
  • 2 lemons-juice only
  • black pepper to taste 
  1. Wash and coarsely chop the vegetables.
  2. Mix all ingredients together.
  3. Refrigerate and marinate for half an hour.
  4. Serve with a slotted spoon to drain marinade before serving.

This salad is very refreshing and colorful and will balance out any summer meal.

Makes 4 servings. Serving size: 2 cups
