Garden Tomato Salad
- 3 medium tomatoes
- 1 large green pepper
- ½ cup green onion
- 1 cup fresh parsley
- 1 cucumber
- 4 red radishes
- 1 Tbsp chopped mint
- 1 clove garlic minced
- ½ Tbsp olive oil
- 2 lemons-juice only
- black pepper to taste
- Wash and coarsely chop the vegetables.
- Mix all ingredients together.
- Refrigerate and marinate for half an hour.
- Serve with a slotted spoon to drain marinade before serving.
This salad is very refreshing and colorful and will balance out any summer meal.
Makes 4 servings. Serving size: 2 cups
