Sesame Ginger Spinach Salad

 

Dressing:

  • 1 Tbsp sesame tahini
  • 1 tsp grated ginger
  • 3 tsp rice vinegar
  • 2 tsp honey

Salad:

  • 8 cups well-washed raw spinach
  • 1 medium cucumber(thinly sliced)
  • 1 Tbsp sesame seeds
  • 1/3 cup sliced green onions
  • 1 medium carrot grated
  • 1 red pepper (thinly sliced)
  1. Combine the ingredients for the dressing in a medium-sized bowl and stir well.
  2. Toss the salad and add the dressing.

Makes 4 servings. Serving size: 2½ cups
