Sesame Ginger Spinach Salad
Dressing:
- 1 Tbsp sesame tahini
- 1 tsp grated ginger
- 3 tsp rice vinegar
- 2 tsp honey
Salad:
- 8 cups well-washed raw spinach
- 1 medium cucumber(thinly sliced)
- 1 Tbsp sesame seeds
- 1/3 cup sliced green onions
- 1 medium carrot grated
- 1 red pepper (thinly sliced)
- Combine the ingredients for the dressing in a medium-sized bowl and stir well.
- Toss the salad and add the dressing.
Makes 4 servings. Serving size: 2½ cups
