Broccoli Apple Slaw

 
  • 1 cup thinly sliced broccoli
  • 2 cups sliced cabbage
  • 1 cored and diced apple (leave skin on)
  • 1 cup nonfat light vanilla-flavored yogurt
  • ¼ cup slivered almonds (or pecans or walnuts)
  • ground cinnamon

Combine broccoli, cabbage, apple, yogurt and almonds together in medium-sized mixing bowl and stir well. Refrigerate until ready to serve. Sprinkle each serving with a little ground cinnamon and enjoy.
Optional serving tip: for added zip, you can add a little soy sauce or vinegar to this salad right before serving.

Makes 4 servings. Serving size: 1 cup
