Caesar Salad
- ½ box silken lite firm tofu (6 ounces)
- 1/3 cup water
- ½ Tbsp. each: prepared mustard
- ½ Tbsp. Worcestershire sauce
- ½ Tbsp. garlic powder
- 4 Tbsp. each: balsamic vinegar
- 4 Tbsp. grated parmesan cheese
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. anchovy paste
Place tofu in a blender or food processor. Blend well with the water. Add the rest of the ingredients and blend until smooth. Refrigerate and keep well chilled until ready to serve.
Makes 8 servings. Serving size: 3 Tbsp.
Great Caesar ideas:
Chicken Caesar:
Toss romaine lettuce with the dressing and serve with warm strips of chicken salad. Garnish with toasted french bread slices.
3 Bean Caesar:
Toss romaine lettuce with the dressing and 3 types of beans: green, kidney and black. Garnish with toasted french bread slices.
Broccoli Caesar:
Toss romaine lettuce with the dressing and steamed broccoli flowerets Garnish with toasted french bread slices.
Pasta Caesar:
Toss the dressing with macaroni and your favorite salad veggies.
