Chinese-style bulgur
- 1 cup uncooked bulgur
- 1¾ cups boiling water
- 2 tsp. sesame oil
- ½ cup sliced green onions
- 1 clove garlic minced
- ½ cup sliced water chestnuts drained
- 1½ Tbsp. light soy sauce
- ¼ tsp. ginger powder
- Black pepper to taste
Place the bulgur in a bowl, then add the boiling water. Cover and let stand until all the water is absorbed, about 25 minutes. Heat the sesame oil in a large nonstick skillet then add the green onions and garlic. Cook 1 minutes. Stir in the water chestnuts, soaked bulgur, soy sauce, ginger and black pepper. Cook, turning gently with a spatula until hot, about 3 minutes.
Makes 4 servings. Serving size: ¾ cup
