Sweet Potato Succotash
- 2 cups frozen corn kernels
- 10oz package frozen lima beans
- 1 onion diced
- 1 red or green bell pepper diced
- 1 garlic clove minced
- 1 can sweet potatoes (drained and diced)
- ½ tsp dried thyme
- salt and pepper to taste
Cook lima beans and corn according to package directions. Spray a saucepan with cooking spray. Add garlic, onion and pepper. Stir while cooking for 5 minuets. Stir in the sweet potato, lime beans, corn and remaining ingredients. Cook for 5 to 7 minutes.
Makes 6 servings. Serving size: ¾ cup
