Sweet Taters and Apples

 
  • 2 sweet potatoes peeled & sliced
  • 3 apples peeled cored & sliced
  • 1 cup apple juice
  • 1 Tbsp corn starch

In a casserole dish with a lid, layer the sliced sweet potatoes and apples. Combine the apple juice and corn starch and pour over the apples/sweet potatoes. Cover with a lid or foil. Bake at 350° until the sweet potatoes are tender, about 1 hour.

Makes 6 servings. Serving size: ¾ cup
