Tortilla Rolls

 
  • 2 8" inch tortillas
  • 1 Tbsp. lowfat mayonnaise
  • 2 slices turkey breast
  • 8 spinach leaves (1 cup)
  • 1/3 cup shredded carrots
  • 1 Tbsp. fresh chopped parsley
  • 4 strips roasted red pepper

Place a tortilla on a plate. Cover with ½ teaspoon mayonnaise. Then layer with a slice of turkey and then the spinach leaves. Place a line of shredded carrots down the center, top it with parsley and red pepper and then roll the tortilla. The roll can be served this way or it can be cut into 8 slices and served on their sides so the colorful vegetables are showing.

Makes 2 servings. Serving size: 3¾ oz.
