Quinoa And Black Bean Chili
This quick and easy quinoa black bean chili is sure to be a favorite when you want a hearty and healthy meal.


  • 1 ½ tablespoon olive oil
  • ½ yellow onion, diced
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon ground oregano
  • 1 garlic clove, chopped
  • ½ green bell pepper, diced
  • ½ red bell pepper, diced
  • 1 can of black beans, drained and rinsed
  • 1 medium fresh tomato, diced
  • ½ cup fresh zucchini, diced
  • 1 can whole kernel corn, drained and rinsed
  • 1 jalapeno pepper, de-seeded and diced
  • 1 tablespoon chipotle paste
  • ½ cup tomato paste
  • 32 ounces vegetable or chicken broth
  • Salt and pepper to taste
  • 3 cups quinoa cooked


Heat olive oil in a heavy stock pot. Add yellow onion cook until translucent and fragrant about 1-3 minutes. Stir in chili powder, cumin, oregano and garlic. Add red and green bell pepper, black beans, tomato, zucchini, corn, jalapeno, chipotle and tomato paste. Slowly add broth. Be careful the steam can be very fragrant due to all of the spices and jalapeno. Stir and allow to simmer for 5–10 minutes. Add salt and pepper to taste and stir in cooked quinoa. Allow to simmer for another 5 minutes and chili is on!! Yield: 4–8oz servings
